Homemade Elderflower Posset

An English dessert fit for any fairy queen, and super easy to make.

It’s no secret that I adore and am obsessed by Elderflower. I grew up with this magical tree that wildly grows over hedgerows in The Yorkshire Wolds. In Medieval times, people believed the Elderflower tree was home to fairies.

To honour this notion, I’ve developed this quintessentially English dessert fit for any fairy queen.

Elderflower Posset

Ingredients

  • 600ml Double Cream
  • 75g Caster Sugar
  • 1/4 cup Elderflower Cordial*

Method

  1. Heat the cream and sugar in a pan slowly to boiling point
  2. Boil for 3 minutes
  3. Leave to cool
  4. Pour cooled cream mixture into a bowl and whisk
  5. Slowly add Elderflower Cordial drop by drop into the cream until cream has thickened
  6. Pour into your chosen glasses or pretty tea cups
  7. Put in fridge and leave to set for 3 hours

*You can buy Elderflower Cordial, or you can make it, it’s super easy.

Extra Tip: You can add some delicious fruit on top of your posset. I love adding rhubarb, summer strawberries or raspberries, Yum!
